Have you been missing bread on the keto diet? You’re not alone. Many on the keto diet miss out on the carb-y goodness of bread. You can only eat so many bunless burgers and no-bread sandwiches before you start feeling like you’re depriving yourself of one of life’s greatest pleasures – bread. Fortunately, soft and fluffy keto cloud bread does exist. But today, we’re going beyond simple cloud bread, we’re going to show you how to make an exquisite keto cloud bread sandwich from scratch! It’s so flavorful and satisfying, we bet this low carb cloud bread recipe will make many appearances in your kitchen from now on!
Preheat the oven to 150°C (cloud bread needs a lower temperature to bake) and line a baking pan with parchment paper. Separate the egg yolks from the egg whites into two separate bowls.
Using an electric or handheld mixer, whisk the egg whites together with the salt until they hold firm peaks.
Try this fun experiment: turn the bowl upside down. If the whipped eggs don’t fall out, you’re good to proceed to step 3!
Carefully and gently fold in the cream cheese and the baking powder. Next, gradually fold in the egg yolks. It’s important to do this process as gently as possible, so you don’t deflate the egg whites. Otherwise, your cloud bread may turn out into a giant, fluffy omelet!
Gently place dollops of the dough on the lined baking pan, shaping them into about ½ inch (1 cm) thick circles, smoothing out the edges. Bake for about 20-25 minutes until golden.
Note: You can freeform your dough into any shape or size. Since this type of bread does not change shape much during baking, you need to form the dough into your preferred size/shape right from the start.
In the meantime, prepare the sandwich filling. Heat a dry pan and crisp the bacon for a minute on each side (no need to add extra oil). Then slice the tomato and shred the lettuce.
Spread a layer of mayonnaise on each piece of keto cloud bread, add the filling, and top with another piece of bread. Serve warm and enjoy your meal!
