This one is a crustless version of a classic quiche, which is great for reducing the number of carbs while keeping all the flavors and amazing textures. Preheat oven to 350°F and grease an 8x8-inch baking pan. Heat up a nonstick pan on the stove. Slice bacon into thin strips, place it in the heated pan (with no oil!), and fry for about 2-3 minutes until the bacon is crispy and golden brown.
Add the spinach and onion to the pan and mix with the bacon. Let it simmer for a couple of minutes to wilt the spinach.
Remove from the heat and add cheese, cream, and eggs. Season with nutmeg, salt, and pepper.
Transfer into the prepared baking pan and bake for 40-45 minutes. Serve warm.
