We are making a lovely pie that combines ground beef, earthy herbs, and tempting cheese to give you that complete comfort food feel. This low carb pie is perfectly spiced, thick and hearty, yet unbelievably easy to make! If you are hosting a dinner party or planning a picnic, you can even make individual mini pies and serve them hot from the oven in their ramekins. I’m sure The Queen herself would approve!
Preheat the oven to 175°C. Heat the olive oil in a pan and sauté the onion and garlic for 4-5 minutes until tender.
Add the ground beef to the pan, stir well, and season with the oregano, salt, and pepper.
Pour in the tomato paste and the water. Lower heat and let simmer for about 20 minutes.
In the meantime, make the crust by combining all the crust ingredients in a food processor or blender to get a dough. Alternatively, you can also mix all the ingredients by hand. You can use a fork or a spatula to do this.
Line and grease a 23-25 cm pie pan.
Press the dough into the pan and up along the sides. Then use a fork to poke holes in the bottom to allow hot steam to escape and prevent the crust from puffing up later.
Bake the crust for 10-15 minutes.
Remove crust from the oven and fill with the beef mixture.
Layer the cottage cheese and shredded Gouda cheese on top of the pie, and return to the oven.
Bake on the lowest rack for 30-40 minutes until golden brown.
Serve warm.
